Strawberry Salad


Like the rest of the country, we're in the midst of an oppressive heat-wave, so salads will be the main entree on the menu for a while.  This a wonderful, filling, beautiful salad for a hot day.  For two main entree salads, I used:

STRAWBERRY SALAD  (for two)

5 oz spring mix 
1 small heat of Romaine lettuce, chopped
4 oz toasted walnuts
shredded Parmesan
Sliced strawberries

Dressing:
1/4 cup canola oil
1/4 cup + 2 Tbsp sugar
2 Tbsp red wine vinegar
1/2 tsp minced garlic
1/8 tsp salt
1/8 tsp paprika
black pepper

Whisk all dressing ingredients together.

Toss greens with dressing.  Arrange green on plate and top with toasted walnuts, Parmesan, and strawberries.
