Sweet Chili Chicken Salad

A great Asian-inspired salad that is quick to pick together and good any time of the year.  I served this with that wonderful Chicken Wonton Soup.

SWEET CHILI CHICKEN SALAD (4 servings)

2 cups chicken, cooked and shredded
4 cups lettuce, sliced
2 cups bean sprouts
1/2 red pepper, sliced thinly
1/2 cup carrot, sliced thinly
1 cup cucumber, sliced
2 green onions, sliced
cilantro to taste, torn (optional)
mint to taste, torn (optional)
basil to taste, torn (optional)
peanuts to taste, chopped
1/4 cup sweet chili dressing (see below)

Toss everything together and enjoy!

THAI SWEET CHILI DRESSING (makes 1 cup)

1/2 cup sweet chili sauce
1/4 cup coconut milk
2 Tbsp fish sauce
2 Tbsp fresh lime juice
1 Tbsp peanut butter
2 tsp minced garlic
2 tsp ginger, grated or finely minced

Simmer everything in a sauce pan over medium heat until the peanut butter has melted.  Let cool.
